I never hear anyone rave about beets. Yet, they are a nutritional powerhouse and should be incorporated in our diets on a regular basis. I have a recipe for the beets that I love and you can try it here if you haven’t already. In fact you should so that you also eat the beets themselves. But the beets themselves aren’t the only nutritious part of the vegetable. You can also eat the greens! So here is a beet greens recipe that I use whenever I buy beets. Check it out:
Ingredients
1 small sweet yellow onion or 1/4 cup of pre-diced yellow or white onions
3-4 large bunches of any type of beets with vibrant colors and fresh green tops
3 fresh garlic slices OR 1 TBSP minced garlic (in the jar)
4 TBSP olive oil
Ground black pepper to taste
Salt to taste
Instructions
1. Put your oil in a wok or large frying pan and put it on medium-high heat. When the oil is hot, put salt and black pepper in. Then add the chopped onions in the oil, mix and allow them to start sauteeing. After 1 minute, lower the heat to low-medium and keep cooking the onions until they are slightly browned (you don’t want them crispy).
2. Once the onions are slightly browned add your minced or fresh pressed garlic. Only cook for 1 minute or until the garlic pieces start to brown.
3. (Before adding to the pan, you can remove the stems from the leaves of the beet greens. Cut up the greens themselves as you see fit) Add the washed beet greens to your pan and allow them to cook until they are a rich green color.
