Cabbage Recipe: Tasty and Nourishing

Welcome back to our discussion about 5 ways to get more greens in your diet. Last week was part 3 with a tasty recipe for swiss chard. This week I want to share a cabbage recipe that is tasty and nourishing. I know…greens are not our favorite. But their nutritional profile is one we need to thrive and live our healthiest life. So here’s to cabbage!

RECIPE

Ingredients

2 pieces of smoked turkey neckbones

1 small sweet yellow onion or 1/4 cup of pre-diced yellow or white onions

1 large organic head of cabbage

3 fresh garlic slices OR 1 TBSP minced garlic (in the jar)

4 TBSP olive oil

Ground black pepper to taste

Salt to taste

Instructions

1. If you want to use the turkey neck bones to give your cabbage a hearty flavor (which I recommend), cook your turkey neckbones in at least 30 mL of water overnight or at least until they are tender and meat easily separates from the bone. Save the meat and broth and set aside.

2. Put your oil in a wok or large frying pan and put it on medium-high heat. When the oil is hot, put salt and black pepper in. Then add the chopped onions in the oil, mix and allow them to start sauteeing. After 1 minute, lower the heat to low-medium and keep cooking the onions until they are slightly browned (you don’t want them crispy).

3. Once the onions are slightly browned add your minced or fresh pressed garlic. Only cook for 1 minute or until the garlic pieces start to brown.

4. (You should cut up your cabbage head(s) how you want and wash) Add your cabbage to the pan or pot. About 1-2 minutes into cooking, put as much of the turkey meat and broth into the pot or pan and allow the cabbage until it is tender (which does not take long).
